  • 2 lbs Ground Beef (80/20 blend recommended) For flavor and moisture
  • 1 large Onion, chopped
  • 2 medium Green Bell Peppers, chopped
  • 2 medium Red Bell Peppers, chopped
  • 4 cloves Garlic, minced
  • 2 28 oz cans Crushed Tomatoes
  • 1 15 oz can Tomato Sauce
  • 1 15 oz can Diced Tomatoes, undrained
  • 1 15 oz can Kidney Beans, rinsed and drained
  • 1 15 oz can Black Beans, rinsed and drained
  • 1 15 oz can Pinto Beans, rinsed and drained
  • 1 cup Beef Broth
  • ¼ cup Chili Powder Adjust to taste
  • 2 tablespoons Ground Cumin
  • 1 tablespoon Smoked Paprika
  • 1 tablespoon Dried Oregano
  • 1 teaspoon Cayenne Pepper (optional) For extra heat
  • 1 teaspoon Salt Or to taste
  • ½ teaspoon Black Pepper Or to taste
  • 2 tablespoons Olive Oil or Vegetable Oil
  • 1 tablespoon Brown Sugar (optional) To balance acidity

For Garnishing (Optional)

  • to taste Fresh Cilantro, chopped
  • to taste Shredded Cheddar Cheese
  • to taste Sour Cream or Greek Yogurt
  • to taste Chopped Green Onions
  • to taste Jalapeño slices For heat lovers

Instructions
 

Preparation

  • Prep your workspace and gather all your ingredients and tools like a cutting board, knife, and measuring cups.
  • Chop your onion and bell peppers into uniform pieces and mince the garlic.

Cooking

  • In a large pot or Dutch oven, heat the oil over medium-high heat. Add the ground beef and break it up as it cooks until browned, about 5-7 minutes. Drain excess grease.
  • Add the chopped onion and bell peppers. Sauté for 5-7 minutes until softened.
  • Stir in minced garlic and all spices; cook for 1 minute, stirring constantly.
  • Add crushed tomatoes, tomato sauce, diced tomatoes, and all beans; stir to combine.
  • Pour in the beef broth, bring to a simmer, and then reduce heat to low. Cover and simmer for 1-3 hours, stirring occasionally.
  • Taste and adjust seasoning as needed.
  • Serve in bowls and garnish with your choice of toppings.

Notes

For best flavor, let chili sit for a bit before serving. Feel free to try different bean varieties and toppings to make it unique.
