Ingredients
  

  • 1 lb chicken breast diced
  • 1 lb shrimp peeled and deveined
  • 1 bell pepper chopped
  • 1 onion chopped
  • 2 stalks celery chopped
  • 3 cloves garlic minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 cup long-grain rice
  • 2 tsp Cajun seasoning
  • salt and pepper to taste
  • olive oil for cooking

Instructions
 

  • Gather and prepare all ingredients by chopping vegetables and dicing the chicken.
  • Heat olive oil in a large pot over medium heat. Add chicken and cook until golden brown, about 5–7 minutes.
  • Add the chopped onion, bell pepper, celery, and minced garlic. Sauté for 3–5 minutes until softened.
  • Stir in diced tomatoes and chicken broth. Bring to a gentle boil.
  • Add the rice, Cajun seasoning, salt, and pepper. Stir well to combine.
  • Cover and simmer over low heat for 20 minutes, allowing the rice to absorb the liquid.
  • Stir in shrimp and cook for an additional 5 minutes, until shrimp are pink and cooked through.
  • Remove from heat and let rest for a few minutes. Stir gently before serving.

Notes

For extra flavor, add smoked paprika or a squeeze of lemon before serving. You can substitute the chicken with turkey or tofu and use quinoa instead of rice for variation. Leftovers store well and taste even better the next day.
