  • 1 lb cremini mushrooms cleaned and sliced
  • 1 lb fresh green beans trimmed
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 2 tbsp soy sauce
  • ¼ tsp red pepper flakes optional, for heat
  • salt and black pepper to taste

Instructions
 

  • Bring a large pot of water to a boil. Add the green beans and blanch for 2–3 minutes until bright green and crisp-tender.
  • Transfer the green beans to an ice bath to stop the cooking process, then drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add the mushrooms and cook for 5–7 minutes, stirring occasionally, until browned and tender.
  • Add the minced garlic to the mushrooms and sauté for 1 minute until fragrant.
  • Add the blanched green beans to the skillet. Stir in soy sauce, red pepper flakes, salt, and black pepper. Sauté for another 2–3 minutes until heated through and evenly coated.
  • Transfer to a serving dish and garnish with fresh parsley or a squeeze of lemon juice if desired. Serve warm.

Notes

For an Asian-inspired variation, replace olive oil with sesame oil and sprinkle sesame seeds before serving. To make it Italian-style, add cherry tomatoes and Parmesan cheese at the end.
