Ingredients
  

For the Muffins

  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.75 cup milk (or up to 1 cup if batter seems too thick)
  • 0.33 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Topping

  • 0.25 cup granulated sugar
  • 1.5 teaspoons ground cinnamon
  • 2 tablespoons melted butter (for dipping)

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.

Mix Dry Ingredients

  • In a large bowl, whisk together the all-purpose flour, granulated sugar, ground cinnamon, baking powder, baking soda, and salt.

Mix Wet Ingredients

  • In a separate bowl, whisk together the milk, melted butter, egg, and vanilla extract until well combined.

Combine Wet and Dry Mixtures

  • Pour the wet ingredients into the bowl with the dry ingredients and stir just until combined, being careful not to overmix.
  • If the batter feels too thick, add more milk, up to ¼ cup.

Fill the Muffin Tin

  • Spoon the batter into the muffin cups, filling each about ¾ full.

Bake

  • Bake for 18–20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

Prepare the Cinnamon Sugar Topping

  • Melt the remaining butter in a small bowl and mix together the granulated sugar and ground cinnamon for the topping.

Dip and Roll

  • Once the muffins are out of the oven, let them cool for a minute, dip the tops in melted butter, and immediately roll in the cinnamon sugar mixture.
