  • 2 large eggs For a vegan version, swap for flaxseed meal.
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

For the Custard Sauce

  • ¼ cup maple syrup
  • 1 teaspoon ground ginger
  • 1 cup heavy cream Use almond or coconut milk cream for a lighter alternative.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9-inch round cake pan.
  • In a mixing bowl, cream together the softened unsalted butter and sugar until light and fluffy, about 3-5 minutes.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract.
  • In a separate bowl, mix together the flour, baking powder, and salt.
  • Gradually add the dry mixture to the wet ingredients and mix gently until just combined.
  • Fold in the diced apples.

Baking

  • Pour the batter into the prepared cake pan and spread it evenly.
  • Bake for 40-45 minutes or until a toothpick comes out clean.

Making the Custard Sauce

  • In a saucepan over medium heat, whisk together the heavy cream, maple syrup, and ground ginger.
  • Cook until it becomes slightly thickened, stirring occasionally.

Notes

Store the cake in an airtight container for up to 5 days.
