Ingredients
  

Sloppy Joe Filling

  • 1 lb ground beef
  • 2 yellow onions thinly sliced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme or 1/2 tsp dried
  • 1 cup beef broth
  • 1 tbsp cornstarch mixed with 1 tbsp water
  • salt to taste
  • black pepper to taste

For Serving

  • 6 brioche buns toasted
  • 6 slices provolone or Swiss cheese

Instructions
 

  • Heat olive oil and butter in a large skillet over medium heat. Add sliced onions and cook, stirring often, until deeply caramelized, about 20 minutes.
  • Add minced garlic and cook for 30 seconds until fragrant.
  • Add ground beef to the skillet and cook until browned, breaking it up with a spoon. Season with salt and pepper.
  • Stir in Worcestershire sauce and thyme. Pour in beef broth and bring to a simmer.
  • Add cornstarch slurry and cook until the mixture thickens, about 2–3 minutes.
  • Spoon beef mixture onto toasted buns, top with cheese, and serve warm.

Notes

For extra flavor, broil the assembled sandwiches briefly to melt the cheese. Gruyère works especially well for a classic French onion taste.
