  • 8 oz pasta of your choice Any type of pasta works well.
  • 2 large onions, thinly sliced Caramelization adds depth.
  • 3 tbsp butter
  • 2 cups beef broth Can be substituted with vegetable broth for a vegetarian version.
  • 1 cup heavy cream Can use lactose-free alternatives.
  • 1 cup Gruyère cheese, shredded Swiss or mozzarella can be used as substitutes.
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions
 

Preparation

  • Measure out all ingredients for a smooth cooking process.
  • Thinly slice your onions and grate your cheese.
  • Cook the pasta according to package instructions.

Cooking the Base

  • In a large skillet over medium heat, melt the butter.
  • Add sliced onions and cook for about 20 minutes until caramelized.

Building Flavor

  • Stir in the beef broth and thyme, then simmer for about 5 minutes.
  • Pour in the heavy cream and allow it to return to a gentle simmer.

Combining Ingredients

  • Add the cooked pasta to the skillet and toss to coat in sauce.
  • Stir in half of the shredded Gruyère until melted.

Finishing Touches

  • Preheat the broiler and place the skillet under it for a few minutes until cheese is bubbly and golden.
  • Serve hot, garnished with fresh thyme or a sprinkle of pepper if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave, stirring occasionally. Can be frozen for longer storage.
