  • 3 overripe bananas Make sure they are brown and overly ripe for maximum sweetness.
  • 1 cup unsweetened almond milk or oat milk Any non-dairy milk can be used.
  • ¼ cup melted vegan butter Coconut oil or plant-based margarine can be used as a substitute.
  • ½ cup maple syrup Can replace with honey or agave syrup for non-vegan option.
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • a pinch of salt
  • 1 cup almond flour Sunflower seed flour can be used for nut-free option.
  • 1 cup regular or gluten-free all-purpose flour Ensure gluten-free flour has xanthan gum.
  • 1 tbsp cinnamon Add extra spices for flavor if desired.
  • Softened vegan butter for serving

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease your baking pan with a bit of vegan butter.
  • In a large mixing bowl, mash the overripe bananas until smooth. Add in the almond milk, melted vegan butter, maple syrup, and vanilla extract. Whisk until well combined.
  • In another bowl, combine the almond flour, all-purpose flour, baking powder, baking soda, salt, and cinnamon.
  • Slowly add the dry ingredients to the wet banana mixture and gently fold until just combined.
  • Pour the batter into the greased baking pan and spread it evenly.

Baking

  • Place the pan in the preheated oven and bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  • Let the French Toast Banana Bread cool in the pan for about 10-15 minutes, then transfer to a wire rack to cool completely.

Serving

  • Once cooled, slice the banana bread and serve warm with softened vegan butter, a drizzle of maple syrup, a dusting of powdered sugar, and fresh berries.
