Ingredients
  

Chicken

  • 4 boneless skinless chicken breasts

Lemon Herb Marinade

  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 3 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ½ tsp black pepper

Instructions
 

  • In a mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and black pepper.
  • Place chicken breasts in a shallow dish or resealable bag and pour marinade over them. Coat evenly and refrigerate for at least 30 minutes.
  • Preheat grill or grill pan to medium-high heat and lightly oil the grates.
  • Remove chicken from marinade and grill for 5–6 minutes per side, or until internal temperature reaches 165°F (74°C).
  • Let chicken rest for 5 minutes before slicing and serving.

Notes

For extra freshness, garnish with chopped parsley and lemon slices. This chicken pairs well with roasted vegetables or a light salad.
