  • 4-5 medium fresh tomatoes ripe tomatoes are preferred
  • 3 tablespoons olive oil preferably extra virgin
  • 1-2 tablespoons balsamic vinegar adjust to taste
  • pinch salt to taste
  • pinch pepper to taste
  • ΒΌ cup fresh basil leaves a handful is also fine

Preparation

  • Wash the fresh tomatoes under cold water to remove any dirt or pesticides and slice them into wedges or rounds.
  • In a large mixing bowl, combine the sliced tomatoes with olive oil and balsamic vinegar, blending gently.
  • Sprinkle salt and pepper to taste over the ingredients, adding more if necessary.
  • Carefully toss the ingredients together to coat the tomato slices with olive oil and vinegar.
  • Tear fresh basil leaves by hand and add them to the bowl.
  • Give the salad a gentle toss again to mix in the basil.
  • Taste the salad and adjust seasoning with salt, olive oil, or balsamic vinegar as needed.
  • Serve immediately to enjoy the vibrant flavors.

Notes

Best enjoyed fresh, the salad can be stored in an airtight container in the fridge for up to 24 hours. Avoid reheating. For variations, consider adding grilled vegetables or cheese.
