  • Next, grill the corn until it’s nicely charred. This enhances the natural sweetness of the corn while adding a delicious smoky flavor.
  • In a bowl, whisk together the mayonnaise, lime juice, cilantro, salt, and pepper.
  • Add the grilled corn to your mayonnaise mixture. Stir gently to ensure that the corn is well coated.
  • Heat the corn tortillas one by one on a dry skillet for about 30 seconds on each side, or until warm and pliable.
  • Fill each tortilla with a generous portion of shredded chicken, followed by the creamy corn mixture.
  • Sprinkle crumbled cotija cheese on top of each taco for an extra burst of flavor.

Notes
