Ingredients

Main Ingredients

  • 1 medium head cabbage, chopped
  • 1 can diced tomatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 cups Fritos
  • 1 cup shredded cheese
  • 1 onion, diced
  • 1 bell pepper, diced

Instructions

Preparation

  • Start by washing and chopping your vegetables. Dice the onion and bell pepper finely so they cook evenly. Chop the cabbage into bite-sized pieces.
  • Measure out the diced tomatoes and gather your other ingredients to ensure a smooth cooking process.

Cooking the Base

  • In a large skillet over medium heat, add the ground beef. Cook for about 7–10 minutes or until browned, breaking it apart with a spatula as it cooks. Once brown, add the diced onion and bell pepper, stirring occasionally for about 3–4 minutes until they soften.

Seasoning the Meat

  • With the meat, onion, and bell pepper cooked, drain any excess fat from the skillet. Stir in the can of diced tomatoes along with the packet of taco seasoning. Mix well and let the mixture simmer for 2–3 minutes.

Adding Cabbage

  • Next, add the chopped cabbage to the skillet. Stir it in well, ensuring it's mixed with the meat mixture. Cook it for about 10–12 minutes, or until the cabbage is tender but still has a bit of crunch.

Adding Fritos

  • Once the cabbage is cooked to your liking, gently fold in the Fritos. Cook for another 2 minutes, allowing them to warm up and blend with the flavors.

Cheese It Up

  • Sprinkle the shredded cheese evenly over the top of the dish. Cover the skillet with a lid, allowing the cheese to melt for about 3–5 minutes.

Serving

  • Once the cheese is fully melted and bubbling, remove the skillet from the heat. Serve the dish hot, scooping generous portions onto plates.

Enjoy!

  • Sit back, relax, and enjoy the delightful flavors of your Frito Cowboy Cabbage.

Notes

Best enjoyed fresh but can be stored in the refrigerator for 3–4 days or frozen for up to three months. Reheat in a microwave-safe dish covered with a damp paper towel.
