Preparation

  • Gather all your ingredients. Chop the carrots and celery into bite-sized pieces.

Cooking

  • In your slow cooker, combine the prepared frozen meatballs with the chopped carrots and celery. Stir them together.
  • Pour the brown gravy over the meatballs and vegetables.
  • Cover the slow cooker with a lid. Set it to cook on low for 6-8 hours or high for 3-4 hours.
  • Check if the vegetables are tender and the meatballs are heated through after cooking.

Serving

  • Make your mashed potatoes while the pot roast is finishing up.
  • Once everything is cooked, spoon the meatball and vegetable mixture over the mashed potatoes.
  • Garnish with fresh herbs like parsley for added flavor.

Notes

To store leftovers, let the dish cool completely, transfer it into an airtight container, and keep in the refrigerator for up to 3 days. For longer storage, freeze it in individual servings.
