  • 1 cup rolled oats
  • 1 cup fresh raspberries
  • ½ cup yogurt (Greek or regular) Substitute with dairy-free yogurt if needed.
  • 2 tablespoons honey or maple syrup Agave syrup or coconut sugar can be used as a substitute.
  • ¼ teaspoon vanilla extract
  • 1 pinch salt

Preparation

  • Gather all your ingredients to ensure a smooth process.
  • In a mixing bowl, combine rolled oats, yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix until well combined, aiming for a thick and creamy texture.
  • Gently fold in fresh raspberries, being careful not to mash them.
  • Line a baking sheet with parchment paper to prevent sticking.
  • Spread the mixture evenly onto the prepared baking sheet to about a 1/2 inch thick.
  • To achieve even thickness, place another sheet of parchment paper on top and gently flatten with a rolling pin or your hands.
  • Freeze for about 2-3 hours or until firm.
  • Cut into squares or rounds using a sharp knife or cookie cutter.
  • Serve immediately or transfer to an airtight container for later enjoyment.

Notes

These sandwiches can be made ahead of time and stored in the freezer for up to 3 months. They are best enjoyed straight from the freezer, but can be softened at room temperature for a few minutes if desired. Use parchment paper between layers to prevent sticking.
