Ingredients
  

  • ¼ cup peanut butter (or almond butter)
  • 1 Tablespoon honey (or agave syrup)
  • ¾ cup granola your choice
  • 1 cup Greek yogurt whole milk or regular
  • ½ cup sliced fruit berries or fruit of choice (optional topping)
  • 1 Tablespoon chopped nuts (e.g. walnuts) optional topping
  • extra honey drizzle optional

Instructions
 

  • Line a muffin tin with 6 paper or silicone liners.
  • In a small bowl, mix the peanut butter, honey, and granola together until granola is well coated.
  • Divide the granola mixture among the liners, pressing it down to form a base in each cup.
  • Fill each granola base with yogurt (about 2–3 Tbsp per cup) until the liner is nearly full.
  • Top each cup with sliced fruit, chopped nuts, and a drizzle of honey, if desired.
  • Freeze for 30 minutes to 1 hour (or until firm).
  • Let the cups sit at room temperature for ~3–5 minutes before removing from the muffin tin. Store in an airtight container in the freezer for up to several weeks.

Notes

These work best with silicone liners (easier removal). Let them thaw a little before eating to soften. You can customize by changing nut butter, granola, or yogurt flavor.
