Ingredients
  

Brownie Base Ingredients

  • 227 grams unsalted butter
  • 400 grams granulated sugar
  • 4 large eggs
  • 2 teaspoons pure vanilla extract
  • 55 grams unsweetened cocoa powder
  • 1 teaspoon instant espresso powder
  • 125 grams all-purpose flour
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking powder
  • 85 grams mini chocolate chips
  • 1 can (approximately 540 grams) cherry pie filling, drained and cherries separated from syrup

Ganache Ingredients

  • 260 grams semi-sweet chocolate chips
  • 180 millilitres heavy whipping cream

Preparation

  • Gather all your ingredients and measure them accurately. Preheat the oven to 175°C (350°F) and line a 23×33-centimetre baking pan with parchment paper.

Cook the Base

  • In a large microwave-safe bowl, melt the unsalted butter until fully melted. Stir in the cocoa powder until smooth and allow the mixture to cool slightly.

Mix the Sugar and Eggs

  • Add granulated sugar, eggs, and vanilla extract to the cooled mixture. Whisk until fully blended.

Incorporate Dry Ingredients

  • Add baking powder, espresso powder, and salt. Gradually fold in the all-purpose flour until there are no dry spots left.

Add Chocolate Chips

  • Gently fold in mini chocolate chips.

Incorporate Cherry Filling

  • Using a fork, lift the cherries from the pie filling and fold them into the batter.

Bake the Brownies

  • Transfer the brownie batter into the prepared baking pan and bake for 25-30 minutes.
  • Allow the brownies to cool completely on a wire rack.

Prepare the Ganache

  • In a separate microwave-safe bowl, combine semi-sweet chocolate chips and heavy cream. Microwave until the chocolate is melted.

Finish the Ganache

  • Whisk the ganache until glossy and smooth.

Assemble and Set

  • Pipe or drizzle the ganache over the cooled brownies and allow it to set for 20-30 minutes before slicing.

Notes

Customize with different types of chocolate chips or swap the cherry filling for other fruits.
