Preparation

  • Start by gathering all your ingredients and tools, including a cutting board, sharp knife, measuring cups, and a skillet.
  • Using a sharp knife, cut your beef stew meat into bite-sized pieces and halve the baby potatoes.
  • Optional: parboil the potatoes for 5-6 minutes in boiling water to soften them.

Cooking

  • In a skillet, heat 1 tablespoon of olive oil over medium-high heat and sear the beef until golden brown on all sides, about 4-5 minutes.
  • While the beef is searing, combine melted butter with minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and black pepper in a bowl.
  • In the slow cooker, add the halved baby potatoes and the seared beef. Pour the garlic butter sauce over the top and add beef broth.
  • Set the slow cooker to low for 6-8 hours or high for 3-4 hours, until the beef is fork-tender.
  • Allow the dish to rest for about 10 minutes before serving.
  • Serve in bowls and garnish with fresh herbs if desired.

Notes

Store leftovers in airtight containers in the fridge for up to 3-4 days or freeze for up to 3 months. When reheating, add a splash of beef broth if needed.
