Garlic Butter Steak Bites

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

  • to taste fresh parsley, chopped for garnish

Preparation

  • Gather all your ingredients. Pat the steak dry with paper towels to ensure a good sear. Chop the zucchini into half-moons and mince the garlic.

Cooking

  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until hot.
  • Add the steak bites in a single layer and sear for about 1-2 minutes per side until browned. Avoid overcrowding the pan.
  • Once browned, remove the steak from the skillet and set aside.
  • In the same skillet, lower the heat slightly and add 3 tablespoons of butter. Stir until melted and bubbly.
  • Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  • Toss in the zucchini half-moons and cook for about 3-5 minutes until tender-crisp.
  • Return the seared steak to the skillet with the zucchini, tossing everything together in the garlic butter.
  • Cook everything together for another 1-2 minutes to heat through.
  • Sprinkle with fresh parsley before serving if desired.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. Reheat gently to avoid drying out the meat. This dish is versatile; feel free to swap out the zucchini for other vegetables.
