Preparation

  • Start by gathering and measuring out all your ingredients. This includes dicing the chicken breast, mincing the garlic, and washing the spinach.

Cooking

  • In a pot of salted boiling water, cook the gnocchi according to the package instructions for about 2-3 minutes or until they float to the top. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced chicken to the skillet and cook until browned, about 5-7 minutes.
  • Once the chicken is browned, stir in the minced garlic and cook for about 1 minute until fragrant.
  • Pour in the chicken broth and bring to a simmer, deglazing the skillet.
  • Add the heavy cream to the skillet, stirring well, and let it simmer for about 3-5 minutes until slightly thickened.
  • Stir in the spinach and allow it to wilt for about 2 minutes.
  • Toss the cooked gnocchi into the skillet and mix until well coated with the creamy sauce.
  • Season with salt and pepper to taste, and serve hot.

Notes

For a gluten-free version, consider using gluten-free gnocchi. Substitute heavy cream with coconut cream for dairy-free options. Customize with vegetables or change protein as desired.
