Preparation

  • Gather all your ingredients. Chop the herbs and garlic, peel and chop the potatoes, and slice the carrots.

Cooking the Chicken

  • Pat the chicken breasts dry with a paper towel and season with salt, black pepper, and chopped herbs.
  • Heat olive oil in a skillet over medium heat. Once hot, add the seasoned chicken breasts and sear for about 5 minutes on each side until golden.
  • During the last minute of cooking, add minced garlic and butter to the skillet, basting the chicken with the melted herb-infused butter.

Cooking the Mashed Potatoes

  • In a pot of salted water, boil the Yukon Gold potatoes for about 15 minutes, or until fork-tender.
  • Drain the potatoes and return them to the pot. Add butter and heavy cream, then mash until smooth and well-seasoned with salt.

Preparing the Glazed Carrots

  • In another pan, heat olive oil and remaining butter over medium heat. Add the sliced carrots and cook until tender, about 5-7 minutes.
  • Sprinkle in brown sugar and stir continuously until the carrots are nicely glazed.

Serving

  • Plate the creamy mashed potatoes first, place the sliced garlic herb chicken on top, and add the glazed carrots on the side.
