Ingredients
  

For the Cod Strips

  • 1 pound Cod fillets (cut into strips) Cut into one inch wide strips for even cooking.
  • 1 cup All-purpose flour For coating.
  • 2 Large eggs Beaten for the egg wash.
  • 1 cup Breadcrumbs (Panko for extra crispiness) Provides crunch.
  • 1 teaspoon Garlic powder For flavor.
  • 1 teaspoon Onion powder For flavor.
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • Salt, to taste
  • Pepper, to taste
  • Olive oil, for frying For frying.

For the Zesty Dill Ranch Sauce

  • ½ cup Mayonnaise
  • ½ cup Sour cream For creaminess.
  • 1 tablespoon Fresh dill (chopped) Adds freshness.
  • 1 tablespoon Lemon juice For acidity.
  • 1 teaspoon Garlic powder (for the sauce)
  • 1 teaspoon Onion powder (for the sauce)
  • Salt, to taste (for the sauce)
  • Pepper, to taste (for the sauce)

Instructions
 

Preparation

  • Gather all your ingredients and cut the cod fillets into strips of about one inch wide.
  • In one bowl, combine the all-purpose flour with salt and pepper.
  • In another bowl, whisk the eggs until they are fully combined.
  • In a third bowl, mix the panko breadcrumbs with garlic powder, onion powder, oregano, thyme, salt, and pepper.

Coating

  • Take each cod strip and coat it first in the flour mixture, shaking off excess.
  • Dip the strip in the beaten eggs.
  • Roll it in the panko breadcrumb mixture until fully coated.

Cooking

  • In a large skillet, heat olive oil over medium heat until hot.
  • Carefully place the coated cod strips in the skillet, frying for about 3-4 minutes on each side or until golden brown.
  • Remove the fried cod from the skillet and place on a paper towel-lined plate to drain excess oil.

Making the Sauce

  • In a mixing bowl, combine mayonnaise, sour cream, chopped dill, lemon juice, garlic powder, onion powder, salt, and pepper.
  • Mix until smooth and creamy, adjusting seasoning to taste.

Serving

  • Arrange the Garlic Herb Cod Strips on a serving platter with the zesty dill ranch sauce for dipping.

Notes

For a gluten-free option, substitute all-purpose flour with gluten-free flour and use gluten-free breadcrumbs. You can also bake the cod strips instead of frying them for a lighter version.
