  • 2 lbs ground chicken
  • 1 cup panko bread crumbs
  • ½ cup grated Parmesan cheese (plus more for topping)
  • ¼ cup milk Use almond or oat milk for dairy-free
  • 2 large eggs, lightly beaten Can use flax eggs for vegan option
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup chopped fresh parsley
  • ¼ cup chicken broth
  • 2 tablespoons butter, melted
  • 1 tablespoon garlic powder

Preparation

  • Preheat your oven to 350°F (175°C) and prepare your workspace.
  • In a large mixing bowl, whisk together the milk and eggs until well-blended.
  • Add the panko bread crumbs, grated Parmesan cheese, Italian seasoning, salt, and black pepper to the bowl and gently fold until just combined.
  • In a small skillet, heat olive oil over medium heat, add minced garlic and sauté until fragrant.
  • Stir in the sautéed garlic and chopped parsley into the mixture.
  • Fold in the ground chicken gently.
  • Transfer the mixture to a greased loaf pan and shape it into an even loaf.
  • Mix melted butter and garlic powder in a bowl to create a topping, and brush it on top of the meatloaf.
  • Sprinkle additional Parmesan cheese on top.
  • Pour the chicken broth into the bottom of the loaf pan.
  • Bake for 60-70 minutes, or until the internal temperature reaches 165°F (74°C).
  • Let the meatloaf rest for 10-15 minutes before slicing.
  • Slice and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to 3 months. Reheat in the oven or microwave.
