Preparation

  • Preheat your oven to 200°C (400°F). Wash the baby potatoes under cold water and halve each potato.

Mixing

  • In a mixing bowl, combine the olive oil, minced garlic, salt, and pepper to make a sauce.

Coating

  • Toss the halved baby potatoes in the garlic and olive oil mixture until well-coated.

Baking

  • Arrange the coated potatoes in a single layer on a baking sheet and bake for 25-30 minutes.
  • Check for doneness around the 20-minute mark and remove when golden brown and tender.

Serving

  • Transfer the roasted potatoes to a serving dish, garnish with parsley, and serve warm.

Notes

Avoid overcrowding the baking sheet for crispiness. Can add grated parmesan cheese in the last few minutes of baking for extra flavor.
