  • In a large mixing bowl, combine the white cake mix and instant vanilla pudding mix.
  • Add in 3 egg whites, 1 cup of milk, 1 cup of sour cream, 1/2 cup of vegetable oil, and 1 teaspoon of vanilla extract. Mix with an electric mixer on medium speed for about 2 minutes until batter is smooth.
  • Divide the batter into two bowls; add green food coloring to one bowl and purple to the other.
  • Pour the green batter into one prepared pan and the purple batter into the other. Bake for 28-30 minutes, or until a toothpick inserted comes out clean. Allow to cool for 10 minutes, then transfer to a wire rack.

Assembly

  • Once the cakes are cool, cut them into small cubes.
  • In a separate bowl, whip the heavy cream until stiff peaks form. In another bowl, blend cream cheese with powdered sugar until smooth, then fold the whipped cream into the cream cheese mixture.
  • Crush the Oreos into small pieces and set aside.
  • In mini jars, layer green cake cubes, crushed Oreos, cream filling, and purple cake cubes. Repeat the layers until jars are full.
  • Top with crushed Oreos and colorful sprinkles before serving.
