Wet Ingredients

  • ½ cup unsalted butter, softened Can be substituted with vegan butter.
  • ½ cup sugar
  • ½ cup honey Can be substituted with agave syrup or maple syrup.
  • 2 large eggs Can be replaced with 2 flax eggs for vegan version.
  • ½ cup buttermilk Can be replaced with almond milk or coconut milk with vinegar.
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Start by gathering all your ingredients and measuring them accurately.
  • Preheat your oven to 350°F (175°C) and grease your loaf pan generously.
  • In a large bowl, whisk together the flour, baking soda, salt, ground ginger, and cinnamon.
  • In a separate bowl, cream the softened butter and sugar together until light and fluffy, about 3 to 5 minutes.
  • Add honey to the creamed butter and sugar and mix until well combined.
  • Beat in the eggs one at a time, integrating fully before adding the next. Stir in buttermilk and vanilla extract.
  • Gradually add the dry mixture to the wet ingredients, folding gently until just combined.
  • Pour the batter into the prepared loaf pan.

Baking

  • Bake in the preheated oven for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  • Slice and serve.

Notes

For a richer texture, substitute part of the all-purpose flour with whole wheat flour. Adding a pinch of nutmeg or cloves can enhance the flavor.
