  • 2 cups cooked chicken, shredded Leftover rotisserie chicken works well.
  • 1 cup carrots, diced Chopped into small pieces for even cooking.
  • 1 cup peas Fresh or frozen peas can be used.
  • 1 cup corn Canned, fresh, or frozen corn can be used.
  • ½ cup onion, chopped Yellow or white onion works best.
  • 2 cups chicken broth Low-sodium broth is recommended.
  • 1 cup heavy cream Substitute with coconut milk for a dairy-free option.
  • 2 tablespoons butter For sautéing the vegetables.
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme Dried thyme or fresh can be used.
  • to taste Salt and pepper Adjust according to preference.

Preparation

  • Start by gathering and preparing all your ingredients. Cook the gnocchi according to package instructions and shred the cooked chicken. Chop your vegetables so they’re ready to go.

Cooking

  • In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until it becomes soft and translucent, about 3-5 minutes.
  • Stir in the diced carrots, peas, and corn. Sauté the mixture for another 5 minutes until the vegetables are slightly tender.
  • Add the shredded chicken and cooked gnocchi, mixing everything together until well combined.
  • Slowly pour in the chicken broth and heavy cream, stirring to combine. Sprinkle in the garlic powder and thyme, then season with salt and pepper to taste.
  • Allow the mixture to simmer gently for about 10 minutes, stirring occasionally. This helps meld the flavors together and thicken the sauce.
  • Carefully pour the delicious filling into a pie dish, ensuring an even distribution of ingredients.
  • Unroll the pie crust over the top of the filling. Trim any excess crust, and use a knife to cut several slits in the crust for steam to escape.
  • Preheat the oven to 375°F (190°C) and bake for about 30 minutes, or until the crust turns golden brown.
  • Remove the pie from the oven, let it cool for a few moments, then slice and serve warm.

Notes
