Base Ingredients

  • 500 grams sugar cookie mix Forms the base and provides sweetness.
  • 115 grams unsalted butter, softened Gives the bars a nice texture and flavor.
  • 1 large egg Binds the ingredients together.
  • 96 grams instant butterscotch pudding mix Adds richness and flavor.

Caramel Layer Ingredients

  • 397 grams caramels, unwrapped The star ingredient for the gooey layer.
  • 120 millilitres evaporated milk Helps melt the caramels smoothly.

Crunchy Ingredients

  • 240 grams mixed nuts, coarsely chopped Adds crunch and flavor.
  • 170 grams butterscotch chips For that extra pop of butterscotch goodness on top.

Preparation

  • Preheat your oven to 175°C (350°F).
  • In a medium bowl, blend together the sugar cookie mix, instant butterscotch pudding mix, softened butter, and egg until the dough is smooth.
  • Press the mixture evenly into the bottom of a lightly greased 23 x 33-centimetre baking pan.
  • Bake in the preheated oven for about 20 minutes until the crust is golden and firm.
  • While the crust is baking, combine the unwrapped caramels and evaporated milk in a saucepan. Cook over medium heat, stirring until melted and smooth.
  • Remove from heat, stir in the chopped mixed nuts and pure vanilla extract.
  • Pour the caramel-nut mixture over the baked crust, spreading it evenly.
  • Sprinkle the butterscotch chips on top evenly.
  • Let the bars cool in the pan until fully set before slicing.

Notes

Store bars in an airtight container for up to a week; they can also be frozen for up to three months.
