Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash the zucchinis and trim off the ends. Slice them into thick steaks, approximately 1/2 inch wide.

Cooking

  • Arrange the zucchini slices on a baking sheet lined with parchment paper to prevent sticking.
  • Brush both sides of the zucchini slices generously with garlic butter.
  • Season the zucchini with salt and pepper on both sides.
  • Roast the zucchini in the oven for about 15-20 minutes until tender and slightly browned.
  • Remove the baking sheet from the oven and sprinkle the shredded cheese evenly over the zucchini.
  • Return the baking sheet to the oven and bake for an additional 5 minutes, until the cheese is melted and bubbly.

Serving

  • Remove the dish from the oven and garnish with fresh parsley if desired. Serve warm.

Notes

For easy cleanup, use parchment paper on the baking sheet. Avoid overcrowding the zucchini to ensure proper roasting. Feel free to add different spices or herbs to tailor the dish to your taste.
