Ingredients
  

Ice Cream Base

  • 2 cups Fresh grapes, preferably seedless Use fresh, high-quality grapes for best flavor.
  • 1 cup Cream
  • 1 cup Milk
  • 3 large Egg yolks
  • ¾ cup Sugar Can substitute with stevia or honey for a healthier option.
  • 2 tablespoons Lemon juice
  • 1 teaspoon Vanilla extract

Preparation

  • Gather all your ingredients and set fresh grapes aside.
  • Measure out the cream, milk, egg yolks, sugar, lemon juice, and vanilla extract.

Cook the Base

  • In a saucepan over medium heat, combine cream, milk, and sugar, whisking continuously until warm and sugar dissolves (about 5 minutes).

Add Egg Yolks

  • Remove saucepan from heat, whisk egg yolks in a separate bowl until lighter in color.
  • Gradually mix in a small amount of warm cream mixture to temper yolks, then mix until smooth.

Combine and Cook

  • Pour tempered yolk mixture back into saucepan, return to low heat, and stir until mixture thickens slightly (about 5-7 minutes).

Blend and Strain Grape Puree

  • In a separate saucepan, cook grapes over medium heat until softened (about 10 minutes).
  • Blend grapes until smooth; strain if a smoother texture is desired.

Combine Grape Puree and Flavoring

  • Stir grape puree, lemon juice, and vanilla extract into the thickened cream mixture and let it cool completely.

Freeze the Mixture

  • Pour the mixture into an ice cream maker and churn according to manufacturer's instructions until it reaches soft-serve consistency (20-25 minutes).

Transfer and Freeze Until Firm

  • Transfer to a pre-chilled container, press parchment paper on top, and freeze for at least 4 hours until fully hardened.

Notes

For a dairy-free version, use coconut cream or almond milk instead of cream and milk. For vegan options, skip egg yolks and increase cream or use cashew cream.
