  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano Substitute with fresh herbs if preferred.

Preparation

  • Gather all your ingredients. Ensure chicken breasts are thawed, zest and juice the lemons, and mince the garlic.

Marinade

  • In a large mixing bowl, combine olive oil, lemon juice, lemon zest, minced garlic, dried oregano, salt, and pepper. Whisk until blended.
  • Add chicken breasts and coat thoroughly. Let marinate for at least 30 minutes while preheating the oven to 400°F (200°C).

Baking

  • Arrange marinated chicken in a baking dish and pour any remaining marinade over the top.
  • Sprinkle feta cheese over the chicken.
  • Bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  • Let the chicken rest for a few minutes before serving.

Serving

  • Garnish with fresh parsley before serving.
