  • 1 cup long-grain rice Rinsed
  • 2 cups vegetable broth Use gluten-free if necessary
  • 1 lemon (juiced and zested)
  • 2 tablespoons olive oil Can be omitted for a lower fat version
  • ¼ cup fresh parsley (chopped) For garnish
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Preparation

  • Start by rinsing the long-grain rice under cold water to remove excess starch.

Cooking

  • In a pot, heat the olive oil over medium heat.
  • Add the rinsed rice and toast for 2-3 minutes, stirring constantly.
  • Pour in the vegetable broth, followed by the lemon juice and zest, then sprinkle in salt and black pepper.
  • Bring the mixture to a boil, then reduce heat to low and cover, simmering for 15-20 minutes until the rice is tender.
  • Remove from heat and let it rest for 5 minutes, keeping it covered.
  • Fluff the rice gently with a fork, then stir in the chopped fresh parsley.

Notes

This dish pairs well with grilled chicken, fish, or roasted vegetables. It can be customized by adding your favorite herbs or vegetables.
