  • 450 g beef stew meat, cut into cubes Use uniform cubes for even cooking.
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil For sautéing the meat and vegetables.
  • 400 g crushed tomatoes
  • 1 tablespoon tomato paste
  • 200 g orzo pasta Can substitute with gluten-free orzo if necessary.
  • 600 ml water or beef broth Choose between water or broth for added flavor.
  • 1 stick cinnamon stick or 0.25 teaspoon ground cinnamon
  • 1 bay leaf
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh parsley, finely chopped, for garnish Adds freshness to the dish.

Preparation

  • Gather all the necessary ingredients for Greek Manestra Beef Orzo.
  • Ensure your beef stew meat is cut into uniform cubes for even cooking.
  • Finely chop the onion and mince the garlic.

Cooking

  • Heat the olive oil in a large pot over medium-high heat.
  • Once hot, add the beef cubes and allow them to brown on all sides.
  • Add the chopped onion and minced garlic to the pot and sauté until the onion is softened and translucent, about 3-4 minutes.
  • Stir in the tomato paste and cook for another minute.
  • Pour in the crushed tomatoes and your choice of water or beef broth, and stir well.
  • Add the cinnamon stick or ground cinnamon, bay leaf, salt, and pepper into the pot.
  • Bring the pot to a gentle simmer. Reduce the heat slightly and let it cook for 25-30 minutes, stirring occasionally.
  • Once the beef is tender, stir in the orzo pasta, continue cooking for about 10 minutes, and add more broth or water if needed.
  • Adjust seasoning, remove the bay leaf and cinnamon stick if used.

Serving

  • Sprinkle fresh parsley over the dish before serving.
  • Allow it to rest for a few minutes to enhance the flavors.

Notes

Store leftovers in an airtight container for up to three days. Can freeze for up to three months. Reheat on low heat with a splash of broth or water.
