  • ½ cup vegetable oil
  • 4 pieces eggs Use flaxseed or applesauce for vegan version.
  • 1 tablespoon baking powder Check freshness before use.
  • 1 teaspoon vanilla extract Enhances flavor.
  • ½ cup almonds Optional; can substitute with other nuts.
  • to taste powdered sugar For dusting.
  • 1 piece coin Wrap in aluminum foil before hiding in cake.

Preparation

  • Gather all ingredients and preheat your oven to 350°F (175°C).

Batter Preparation

  • In a large mixing bowl, beat the eggs and sugar together until fluffy.
  • Add the yogurt and vegetable oil, stirring until fully combined.
  • In a separate bowl, mix the flour, baking powder, and vanilla extract. Gradually add to the wet ingredients, stirring until smooth.
  • Fold in the almonds if using.

Baking

  • Pour the batter into a greased round cake pan. Wrap the coin in foil and place it in the batter.
  • Bake for 30-40 minutes, or until a toothpick comes out clean.
  • Let the cake cool for 10 minutes in the pan, then transfer to a wire rack to cool completely and dust with powdered sugar before serving.

Notes

For a vegan version, use flaxseed instead of eggs and coconut-based yogurt. Can be served during New Year’s celebrations or family occasions.
