Preparation

  • Start by gathering all your ingredients on a clean countertop.
  • In a medium-sized mixing bowl, combine chia seeds, Greek yogurt, milk, honey, and vanilla extract. Mix well to ensure chia seeds are evenly distributed.
  • Allow the mixture to sit for about 5 minutes to let the chia seeds absorb liquid and swell.
  • After 5 minutes, give the mixture another stir to prevent any clumping of the chia seeds.
  • Cover the bowl with plastic wrap or a lid and transfer it to the refrigerator. Let it chill for at least 2 hours or overnight for best results.
  • After chilling, check the pudding’s consistency. If too thick, stir in a little more milk.
  • Scoop the pudding into individual bowls or jars.
  • Top with your favorite fresh fruits or nuts.
