  • 2 cups cooked chicken, diced Use rotisserie for convenience.
  • 1 cup Greek yogurt For a dairy-free alternative, use coconut yogurt.
  • ½ cup celery, chopped Substitute with cucumber or bell pepper if desired.
  • ¼ cup red onion, diced
  • ½ cup grapes, halved Substitute with diced apples or cranberries.
  • 1 tablespoon lemon juice
  • 1 teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Adjust to taste.
  • 1 tablespoon fresh dill, chopped Can be substituted with basil or parsley.

Preparation

  • Gather all your ingredients on the counter.
  • If starting with raw chicken, season and cook it until it reaches 165°F (75°C). Let cool, then dice.
  • In a large bowl, mix 1 cup of Greek yogurt.
  • Dice the celery and red onion into small pieces.
  • Halve the grapes.
  • Combine the diced chicken, chopped celery, diced onion, and halved grapes into the bowl with Greek yogurt.
  • Add lemon juice, salt, and black pepper, then mix well.
  • Stir in fresh dill and mix to combine.
  • Taste and adjust seasoning as needed.
  • Serve chilled or at room temperature, letting sit in the fridge for 20-30 minutes for enhanced flavor.

Notes

Serve this salad at family meals, picnics, or potlucks. It is easy to pack for lunches in containers. Keep additional crunch by adding nuts just before serving.
