Ingredients
  

Salad Ingredients

  • 2 cups fresh green beans trimmed
  • 1 cup cherry tomatoes halved
  • ½ cup feta cheese crumbled
  • ¼ cup red onion thinly sliced

Dressing

  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar or lemon juice
  • salt and pepper to taste

Instructions
 

  • Trim the ends of the green beans and rinse under cold water.
  • Bring a large pot of water to a boil. Add green beans and cook for 4–5 minutes until tender but still crisp.
  • Drain and rinse the beans immediately under cold water to stop the cooking process and keep their bright color.
  • In a mixing bowl, combine green beans, cherry tomatoes, crumbled feta, and sliced red onion.
  • In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper to make the dressing.
  • Pour the dressing over the vegetables and toss gently to coat evenly.
  • Chill for 30 minutes to let flavors meld or serve immediately, garnished with extra feta or fresh herbs if desired.

Notes

For a vegan version, use dairy-free feta or omit cheese entirely. Add grilled chicken or chickpeas for extra protein. This salad keeps well in the fridge for up to 3 days but is best served fresh.
