Preparation

  • Gather all the ingredients to ensure a smooth cooking process.
  • Chop the onion and mince the garlic.

Cooking

  • In a large pot, combine the chicken, chicken broth, chopped onion, minced garlic, and cumin. Bring to a boil, then reduce to a simmer for about 20 minutes, until chicken is cooked through and tender.
  • Remove the chicken from the pot and shred into bite-sized pieces.
  • Add the hominy and green salsa to the simmering broth, stirring gently to mix.
  • Return the shredded chicken to the pot and let everything simmer together for another 10 minutes.
  • Adjust seasoning with salt as desired.

Serving

  • Ladle the Green Chicken Pozole into serving bowls, garnishing with fresh cilantro and a squeeze of lime. Serve hot.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months. Reheat on the stovetop, adding broth if needed.
