  • 2 cups cooked rice Use any type of rice you prefer.
  • 1 lb chicken breasts Seasoned with salt and pepper.
  • 1 cup salsa verde Can use store-bought or homemade.
  • 1 tablespoon olive oil For cooking the chicken.
  • to taste Salt and pepper Essential for seasoning.
  • to taste Chopped cilantro For garnish.

Instructions
 

Preparation

  • Gather all your ingredients. Make sure your rice is pre-cooked and set aside.
  • Season your chicken breasts with salt and pepper, and chop your cilantro for garnish.

Cooking

  • In a skillet, heat the olive oil over medium heat.
  • Add the seasoned chicken breasts and cook for about 6-7 minutes per side until golden brown and fully cooked (internal temperature of 165°F).
  • Remove the chicken and let it rest for a few minutes, then slice into strips.
  • In the same skillet, add salsa verde and warm it up.
  • Add the cooked rice and gently fold it in with the salsa until evenly coated.
  • Mix in the sliced chicken, allowing everything to meld for 2-3 minutes on low heat.

Serving

  • Remove from heat, transfer to a serving dish, and garnish with chopped cilantro. Serve immediately.

Notes

To maintain flavor, store leftovers in an airtight container for up to 3-4 days. May be reheated in the microwave or stovetop.
