Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning or homemade blend
  • 1 cup cooked white rice
  • ½ cup sour cream
  • ½ cup nacho cheese sauce
  • ¼ cup chipotle sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • butter or oil for grilling

Instructions

  • In a skillet, cook ground beef over medium heat until browned, about 5–7 minutes. Drain excess grease.
  • Add taco seasoning and 1/4 cup water. Simmer for 5 minutes until flavors meld.
  • Warm tortillas in a skillet or microwave until soft and pliable.
  • Lay out tortillas and layer rice, seasoned beef, nacho cheese, chipotle sauce, sour cream, cheddar, and mozzarella.
  • Fold sides inward and roll tightly into burritos.
  • Heat skillet with a little butter or oil. Sprinkle cheese on the skillet, then place burrito seam-side down. Cook 3–4 minutes per side until golden and crispy.
  • Serve hot with salsa, guacamole, or extra chipotle sauce.

Notes

For a vegetarian version, replace beef with beans or lentils. Use Greek yogurt instead of sour cream for a lighter option.
