In a skillet, cook ground beef over medium heat until browned, about 5–7 minutes. Drain excess grease.
Add taco seasoning and 1/4 cup water. Simmer for 5 minutes until flavors meld.
Warm tortillas in a skillet or microwave until soft and pliable.
Lay out tortillas and layer rice, seasoned beef, nacho cheese, chipotle sauce, sour cream, cheddar, and mozzarella.
Fold sides inward and roll tightly into burritos.
Heat skillet with a little butter or oil. Sprinkle cheese on the skillet, then place burrito seam-side down. Cook 3–4 minutes per side until golden and crispy.
