Grilled Halloumi Sandwiches

Ingredients
  

Main Ingredients

  • 200 g Halloumi cheese Sliced into 1/2-inch thick pieces.
  • 4 slices Bread of choice (sourdough, whole grain, or pita) Best for grilling.
  • 2 tablespoons Olive oil For brushing halloumi.

Vegetables and Spread

  • 1 cup Lettuce Any variety preferred.
  • 1 medium Tomato Sliced.
  • 1 small Cucumber Sliced.
  • ½ small Red onion Thinly sliced.
  • ¼ cup Hummus For spreading on the bread.

Instructions
 

Preparation

  • Gather all your ingredients. Rinse your veggies, slice the halloumi, and prepare your bread.

Grilling

  • Preheat a grill or grill pan over medium heat.
  • Brush both sides of each halloumi slice with olive oil.
  • Place the halloumi on the grill and cook for 2-3 minutes on each side until golden brown.
  • While the halloumi is grilling, place your bread slices on the grill for 1-2 minutes.

Assembly

  • Spread hummus on one side of each toasted slice of bread.
  • Layer the lettuce, tomato slices, cucumber, and red onion on top of the hummus.
  • Add the grilled halloumi on top of the veggies.
  • Top with the remaining slices of bread, hummus side down, and gently press down.
  • Cut the sandwich in half if desired, and serve warm.

Notes

Ideal for a sunny picnic or casual gathering. Best consumed fresh but can be stored in the refrigerator for one day.
