Grilled Lime Salmon with Avocado-Mango Salsa

Ingredients
  

Salmon Fillets

  • 4 salmon fillets (approximately 6 oz / ~170 g each)
  • 3 Tbsp olive oil
  • 2 tsp lime zest zest of about 1 lime
  • 3 Tbsp fresh lime juice
  • 3 garlic cloves, crushed
  • salt and freshly ground black pepper, to taste

Avocado-Mango Salsa

  • 1 large mango, peeled and diced
  • 1 large avocado, peeled and diced
  • ¾ cup chopped red bell pepper
  • cup chopped red onion (rinsed) rinsed under cold water to mellow flavor
  • ¼ cup chopped fresh cilantro
  • 1 Tbsp fresh lime juice (for salsa)
  • 1 Tbsp olive oil (for salsa)
  • salt and pepper, to taste (for salsa)

Instructions
 

  • Whisk together olive oil, lime zest, lime juice, crushed garlic, salt and pepper in a shallow dish. Place the salmon fillets in the dish and turn to coat. Cover and refrigerate to marinate for about 15-30 minutes.
  • Preheat a grill (or grill pan) to medium-high heat. Brush the grates lightly with oil to prevent sticking.
  • Place the salmon fillets skin-side down (if applicable) on the hot grill. Grill for about 4-5 minutes, then carefully flip and grill an additional 3-5 minutes, or until salmon flakes easily and is cooked through.
  • While the salmon is grilling, prepare the salsa: in a medium bowl toss together the diced mango, diced avocado, chopped red bell pepper, red onion, cilantro, lime juice and olive oil. Season with salt and pepper to taste.
  • When salmon is done, transfer to serving plates. Spoon the avocado-mango salsa over each fillet and serve immediately.

Notes

You can adjust the salsa to your taste: add diced jalapeño for heat, or swap in different coloured peppers. Salmon can also be baked at 400 °F (≈ 200 °C) in the oven for 12-15 minutes if you don’t have a grill.
