  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Preparation

  • Gather all the ingredients and dice the mango.
  • Ensure the chicken thighs are trimmed and ready for marinating.

Making the Marinade

  • In a medium-sized bowl, combine diced mango, soy sauce, honey, olive oil, garlic powder, ginger, salt, and pepper. Stir until well mixed.

Marinating the Chicken

  • Place the chicken thighs in the bowl of marinade, ensuring they are fully coated. Cover and let them marinate for at least 30 minutes.

Grilling

  • Preheat your grill to medium-high heat.
  • Remove the chicken from the marinade, shaking off any excess, and discard the leftover marinade.
  • Place the chicken thighs on the preheated grill. Cook for about 6-7 minutes on each side or until internal temperature reaches 165°F.
  • Use a meat thermometer to check doneness or ensure juices run clear.

Serving

  • Remove the chicken from the grill and let it rest for a few minutes.
  • Serve the Grilled Mango Chicken warm, garnished with additional mango chunks if desired.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days. For longer storage, freeze in a freezer-safe bag for 2-3 months. Reheat using oven or microwave.
