Preparation

  • Peel, core, and slice the fresh pineapple into rings or wedges.
  • In a bowl, mix together the brown sugar, rum, and ground cinnamon.
  • Add the pineapple slices to the bowl and ensure they are well coated in the marinade. Let them soak for at least 30 minutes.

Cooking

  • Preheat your grill to medium-high heat.
  • Remove excess marinade from the pineapple slices.
  • Place the pineapple slices on the grill and cook for about 3-4 minutes on each side until caramelized.
  • If desired, brush with butter just before flipping for added richness.

Serving

  • Remove the grilled pineapple from the grill and serve warm, optionally with ice cream or yogurt.
