Ingredients
  

Main Ingredients

  • 1 lb ground turkey lean preferred
  • 2 medium sweet potatoes diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper any color, diced
  • 1 tsp paprika
  • salt and pepper to taste
  • 1 tbsp olive oil for sautéing
  • fresh parsley for garnish

Instructions
 

  • Prepare all ingredients by chopping the vegetables and setting them aside.
  • Heat olive oil in a large skillet over medium heat until shimmering.
  • Add the onion and garlic, and sauté until fragrant and translucent, about 3–5 minutes.
  • Add ground turkey and cook until browned, breaking it apart with a spoon, about 5–7 minutes.
  • Stir in diced sweet potatoes and bell pepper. Mix well to combine.
  • Season with paprika, salt, and pepper. Mix evenly to coat all ingredients.
  • Cover the skillet and cook for 15–20 minutes, stirring occasionally, until the sweet potatoes are tender.
  • Remove lid, stir well, and check seasoning. Add more salt or spices if needed.
  • Garnish with fresh parsley and serve warm straight from the skillet.

Notes

To make it spicy, add chili flakes or cayenne pepper. For a twist, add black beans or spinach during the final 5 minutes of cooking. This dish reheats well and can be stored for 3–4 days in the fridge.
