  • 1 pound ground turkey Lean ground turkey is recommended.
  • 2 medium zucchinis Slice into half-moon shapes.
  • 1 tablespoon olive oil Used to sauté the onions.
  • ½ medium onion Finely chopped.
  • 2 cloves garlic Minced.
  • 1 teaspoon dried oregano Adds Italian flavor.
  • ½ teaspoon salt To taste.
  • ¼ teaspoon black pepper To taste.
  • ¼ teaspoon crushed red pepper flakes Adjust according to preferred spice level.
  • ¼ cup chicken broth Can use gluten-free if needed.
  • ¼ cup grated Parmesan cheese Adds creaminess to the dish.

Preparation

  • Gather and prepare all ingredients: chop the onion, mince the garlic, and slice the zucchinis.

Cooking

  • Heat the olive oil in a large skillet over medium heat. Add chopped onion and sauté until soft and translucent (3-4 minutes).
  • Add minced garlic and cook for another 30 seconds until fragrant.
  • Crumble the ground turkey into the skillet, breaking it apart. Cook until browned and no longer pink (6-8 minutes).
  • Stir in the sliced zucchini and cook for another 4-5 minutes until slightly softened.
  • Sprinkle the oregano, salt, black pepper, and crushed red pepper into the skillet. Adjust spices as needed.
  • Pour in the chicken broth and stir everything together. Reduce heat to low and simmer for 3-4 minutes.
  • Once the zucchini is tender, sprinkle the grated Parmesan over the mixture and stir until melted.
  • Taste and adjust seasonings before serving.
  • Serve immediately, garnished with extra Parmesan if desired.

Notes

Store leftovers for 3-4 days in an airtight container. This dish is ideal for meal prep.
