Ingredients
  

Base

  • 1 lb ground turkey
  • 2 medium sweet potatoes diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper chopped
  • 1 can black beans drained and rinsed
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tbsp olive oil
  • salt and pepper to taste

Optional Topping

  • 1 cup shredded cheese optional

Instructions
 

  • Preheat oven to 400°F (200°C). Chop sweet potatoes, onions, garlic, and bell pepper.
  • Heat olive oil in a skillet over medium heat. Add onions and garlic; sauté until fragrant.
  • Add ground turkey to the skillet and cook until browned, breaking it apart as it cooks (5–7 minutes).
  • Stir in diced sweet potatoes, bell pepper, and black beans. Season with cumin, paprika, salt, and pepper.
  • Cook for 10–15 minutes, stirring occasionally, until sweet potatoes are tender.
  • Transfer mixture into a greased baking dish and spread evenly.
  • Top with shredded cheese if desired, then bake for 20 minutes until bubbly and golden.
  • Let cool slightly before serving. Garnish with parsley or cilantro if desired.

Notes

To make this dish spicier, add jalapeños or red pepper flakes. For a dairy-free version, omit the cheese or replace it with a vegan alternative. Leftovers store well in the fridge for up to 4 days or can be frozen for up to 3 months.
