  • 1 lb ground turkey
  • 1 tbsp olive oil For sautéing
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 packet taco seasoning Ensure gluten-free if necessary
  • 1 cup diced tomatoes
  • 1 cup shredded cheese Use dairy-free cheese if necessary
  • to taste Salt and pepper Adjust for preference

Preparation

  • Gather all the ingredients. Chop the onion, bell pepper, and mince the garlic.

Cooking

  • In a large skillet over medium heat, add the olive oil and let it warm for about 30 seconds.
  • Add the chopped onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion becomes translucent.
  • Increase the heat to medium-high and add the ground turkey. Cook for about 5-7 minutes until it’s thoroughly browned.
  • Add the chopped bell pepper, black beans, and corn. Cook for another 2-3 minutes.
  • Sprinkle the taco seasoning over the mixture and add the diced tomatoes. Stir well and let simmer for about 10 minutes.
  • Sprinkle shredded cheese evenly over the top and cover with a lid for 2-3 minutes to melt.
  • Taste your skillet mix and season with salt and pepper to your liking.
  • Serve immediately onto plates or in bowls.

Notes

Let any leftovers cool before storing in an airtight container. Best enjoyed fresh but can be stored in the fridge for up to 4 days.
