Ingredients
  

Pasta and Main Ingredients

  • 1 lb Halloween Pasta Or any shaped pasta you have.
  • ½ cup Red Onion (finely chopped)
  • ¾ cup Rainbow Carrots (sliced into rounds) You can substitute with bell peppers.
  • 1 cup Spinach (chopped) Feel free to use kale for a different texture.

Dressing

  • ¼ cup Extra Virgin Olive Oil Avocado oil can be used as an alternative.
  • 2 tbsp Red Wine Vinegar Balsamic vinegar works too.
  • 1 tsp Brown Mustard
  • ½ tsp Maple Syrup Honey can be used as a substitute.
  • ¼ tsp Dried Sage
  • ¼ tsp Dried Oregano
  • ¼ tsp Dried Thyme
  • Salt + Pepper (to taste)

Instructions
 

Preparation

  • Gather all your ingredients and kitchen tools.
  • Fill a large pot with salted water and bring it to a boil.

Cooking

  • Add the Halloween pasta to the boiling water and cook until al dente, about 8 to 10 minutes.
  • Drain the pasta and rinse it briefly under cold water.

Dressing and Mixing

  • While the pasta cooks, finely chop the red onion and spinach, and slice the rainbow carrots.
  • In a bowl, whisk together the olive oil, red wine vinegar, brown mustard, maple syrup, dried sage, oregano, thyme, and a pinch of salt and pepper.
  • In a large bowl, combine the cooled pasta, chopped veggies, and dressing. Gently toss to coat.

Serving

  • Cover and let the salad rest in the fridge for 30 minutes before serving.
  • Toss again before serving, and enjoy the vibrant flavors.

Notes

For best results, use fresh ingredients. You can also personalize the salad by adding nuts or seasonal flavors. Store any leftovers in an airtight container in the fridge for up to 3 days.
