  • 6 slices deli-style ham Use your choice of ham for a different flavor.
  • 6 large eggs Whisk together before filling.
  • ½ cup shredded cheddar cheese Feel free to substitute with other cheese varieties.
  • Black pepper, to taste Add additional spices as desired.
  • Non-stick cooking spray For preparing muffin tin.

Instructions
 

Preparation

  • Gather all your ingredients and pre-measure the ham, eggs, and cheese.
  • Preheat your oven to 375°F (190°C) and prepare your muffin tin with cooking spray.

Assembly

  • Lightly coat each muffin cup with non-stick cooking spray.
  • Press a slice of deli ham into the bottom and sides of each muffin cup.
  • Whisk the eggs in a skillet over medium heat until scrambled, seasoning with black pepper.
  • Evenly divide the scrambled eggs among the ham-lined cups.
  • Sprinkle the shredded cheddar cheese on top of each cup.

Baking

  • Bake in the preheated oven for about 10 to 12 minutes, until cheese melts and ham edges become crisp.
  • Allow to cool slightly before using a spatula to remove cups from the muffin tin.

Serving

  • Garnish with fresh herbs if desired and serve warm.

Notes

To store leftovers, cool completely and refrigerate in an airtight container for up to 3-4 days. To reheat, microwave for 30 seconds to 1 minute.
