Ingredients
  

Chicken and Marinade

  • 1.5 lbs boneless, skinless chicken breasts or thighs Organic or air-chilled preferred.
  • ½ cup low-sodium teriyaki sauce
  • cup pure pineapple juice No sugar added.
  • ¼ cup low-sodium or naturally brewed soy sauce
  • 3 tbsp dark brown sugar
  • 2 large garlic cloves, minced
  • 1 tbsp freshly grated ginger
  • 1 tsp toasted sesame oil

For Stacking and Garnishing

  • 4 fresh pineapple rings
  • Cooked white rice for stacking
  • 2 tbsp sliced green onions For garnish.
  • 1 tsp sesame seeds For garnish.

Instructions
 

Preparation

  • Gather all your ingredients including the chicken, marinade components, and garnish items.
  • In a medium bowl, whisk together teriyaki sauce, pineapple juice, soy sauce, brown sugar, minced garlic, grated ginger, and toasted sesame oil.
  • Place the chicken in a large zip-top bag or shallow dish and pour the marinade over, ensuring the chicken is well coated. Seal or cover and refrigerate for at least 2 hours, ideally overnight.

Cooking

  • Preheat your grill to medium-high heat.
  • Remove the chicken from the marinade (reserve the marinade) and grill for about 6-7 minutes on each side, until cooked through and reaching an internal temperature of 165°F.
  • While grilling the chicken, add pineapple rings to the grill and cook for about 2-3 minutes on each side until caramelized.
  • In a small saucepan, bring the reserved marinade to a boil. Reduce to a simmer for 5-6 minutes until it thickens into a glaze.

Assembly

  • To assemble, scoop a portion of rice onto each plate, add a piece of grilled chicken, and top with a grilled pineapple ring.
  • Drizzle the thickened glaze over the top and garnish with sliced green onions and sesame seeds.

  • Serve immediately and enjoy the vibrant flavors and aromas.

Notes

For variations, consider using flavors like sriracha for heat or substitute chicken for tofu for a vegan version. Ensure to store leftovers properly in air-tight containers.
